Easiest Chicken Noodle Soup

Homemade Chicken Noodle Soup

This is seriously the easiest chicken noodle soup ever. And so much better than opening a can! It’s a great quarantine meal because it only takes five ingredients, and you can make as much or as little of it as you want. In my opinion, it tastes better as leftovers because the flavors have had more time to get to know each other. This will easily feed 4 people with plenty of leftovers to spare. 

To use it as leftovers, either put it in a mason jar with a tight lid and keep in the fridge for up to four or five days, or put it in a gallon bag in the freezer and take it out whenever you need some comfort! Also, we recently discovered these soup savers on Amazon that seem really easy and awesome! They would be perfect for convenient single servings of soup at a moment’s notice. 

As for these ingredients, we usually keep them on hand so we can whip up this soup at any time. For the chicken broth, you are welcome to make your own or use your own if you have it, but we find it easier to buy already made chicken broth. If you have bouillon cubes instead, you can also use them. For the carrots, if you have leftover baby carrots on hand those will work. Or if you have large carrots, just either wash them thoroughly or peel, and then cut into large bite size chunks. Same goes for the celery. Wash them well because there can be leftover dirt on the ends!

For the rotisserie chicken, we usually get pre shredded chicken from Costco. They come in large packages that are easy to split up into whatever amount is needed. These packs are around 12 dollars, but will vary slightly from state to state. You can also debone your own rotisserie chicken. When we do this, we usually opt for the $5 rotisserie chicken from Sams. And, if you do this you can use the leftovers to make your own chicken broth! 

 

The Ingredients: 

2 quarts Chicken Broth

3-4 large carrots

2-3 ribs of celery

2-3 cups shredded rotisserie chicken

1 16 oz package of Egg Noodles (frozen or dried)

The Directions:

  1. Add chicken broth to a large pot and bring to a boil.
  2. Chop carrots and celery and add broth into large bite sized pieces and add to the broth. Cook for about 10 – 15 minutes or until tender. 
  3. Once veggies are tender, add chicken and egg noodles and cook until noodles are to desired doneness. If you are using dried egg noodles, it takes about 10 minutes. If you are using frozen it takes a little less. The best egg noodles are Reames frozen egg noodles, but any egg noodles will work.
  4. Add salt and pepper to taste.
  5. Serve portions into bowls (if you have fresh dill on hand, this would taste amazing garnished with it! But if not it still tastes delicious as is).  

And it’s as easy as that! The whole meal comes together in about thirty minutes.
