Homemade Chicken Noodle Soup (The Easiest Comfort Meal Ever)

There is something timeless about a bowl of homemade chicken noodle soup. It’s simple, comforting, and somehow tastes even better the next day.
 

This recipe is one of the easiest soups you’ll ever make, and it’s so much better than opening a can. It uses just five ingredients, comes together in about 30 minutes, and easily feeds four people with plenty of leftovers to spare.

It’s one of those meals we always keep in our back pocket. We almost always have the ingredients on hand, which means we can whip it up anytime someone needs a little extra comfort.
 
And honestly? The leftovers might be the best part. Once the flavors have had more time to mingle together, it tastes even richer the next day.

It’s a great “clean out the fridge” recipe too. Baby carrots? Use them. Bouillon cubes instead of broth? Totally fine. Deboned rotisserie chicken from last night’s dinner? Perfect.
 

Ingredient Tips & Substitutions

Chicken Broth
You can absolutely use homemade broth if you have it. But we typically use store-bought broth for convenience. Bouillon cubes work great too! Just prepare according to package directions.
 
Carrots
Large carrots or baby carrots both work. If using large carrots, wash thoroughly (especially near the tops where dirt hides) or peel before chopping into large bite-sized pieces.
 
Celery
Be sure to wash well. Dirt can hide near the base. Chop into chunky pieces so they hold up in the soup.
 
Rotisserie Chicken
We love using pre-shredded rotisserie chicken from Costco because it’s easy and convenient. You can also debone your own rotisserie chicken (Sam’s has a great budget option). Bonus: use the leftover bones to make homemade broth!
 
Egg Noodles
Frozen egg noodles (like Reames) are fantastic, but dried egg noodles work just as well. Use what you have.

Homemade Chicken Noodle Soup

The Easiest Comfort Meal Ever

Ingredients
  

  • 2 quarts chicken broth
  • 3-4 large carrots chopped
  • 2-3 ribs celery chopped
  • 2 cups shredded rotisserie chicken
  • 1 16 oz package egg noodles (frozen or dried)
  • Salt and pepper to taste
  • Optional: fresh dill for garnish

Method
 

  1. Add chicken broth to a large pot and bring to a boil.
  2. Add chopped carrots and celery. Cook for 10–15 minutes, or until tender.
  3. Stir in shredded chicken and egg noodles.
    * Dried noodles: cook about 10 minutes.
    * Frozen noodles: cook slightly less, until tender.
  4. Season with salt and pepper to taste.
  5. Serve warm. Garnish with fresh dill if you have it.
  6. That’s it. Simple. Cozy. Done.

Notes

How to Store & Freeze
Refrigerator:
Store in airtight containers or mason jars for up to 4–5 days.
 
Freezer:
Pour into freezer-safe gallon bags or portion into individual containers for easy single servings. Lay flat to freeze for space-saving storage.
