A One-of-a-Kind Italian Omakase Experience in Fairhope
If you’re searching for one of the most unique dining experiences in Fairhope, Alabama, Amaro Supper Club deserves a spot at the very top of your list.
Hosted by Chef Orlando Amaro, this intimate Italian omakase-style dinner welcomes just eight guests around a single table for an evening centered around incredible food, conversation, and hospitality. It’s more than dinner… it’s an experience you’ll remember long after the last bite.
A Warm Welcome
We arrived at the charming home just outside downtown Fairhope a few minutes before 7 p.m. Before we even reached the door, it opened and Chef Orlando Amaro greeted us with a hug alongside his lovely wife.
Inside, a beautifully set dining table for eight guests filled the main room while the open kitchen buzzed with chefs putting the finishing touches on the evening’s meal.
We were welcomed with a glass of Prosecco and introduced to the other guests who had already arrived. Everyone mingled over drinks while Chef Amaro shared a little about the evening’s menu, explaining that many ingredients are sourced locally whenever possible while others are imported directly from Italy to create an authentic Italian dining experience.
Still or sparkling water was offered throughout dinner, along with an excellent Italian table wine that paired beautifully with the rich pasta courses to come.
Course One: Amuse-Bouche
The evening began with an amuse-bouche featuring breadsticks wrapped in Prosciutto di Parma with black truffle butter.
Simple? Yes.
Memorable? Absolutely.
The crisp breadstick, salty prosciutto, and rich truffle butter created the perfect first bite. Eric immediately nicknamed them “prosciutto popsicles,” and honestly…it fit.
Course Two: Burrata with Fried Black Cabbage Pesto
Next came an incredible plate of:
- Artisanal buffalo milk burrata
- Fried black cabbage (kale) pesto
- Pistachios
- Preserved figs
Alongside it, we were served thick squares of warm focaccia with olive oil and seasoned olives topped with Parmesan.
Chef Amaro explained that the burrata was freshly made from buffalo milk, and every bite tasted incredibly fresh. Spread across the warm focaccia, the combination of creamy cheese, herbaceous pesto, sweet figs, crunchy pistachios, and salty olives created one of those bites where every flavor worked together perfectly.
Course Three: Ravioli with Egg Yolk & Black Truffle (Our Favorite)
This was easily our favorite dish of the evening.
A single oversized ravioli arrived stuffed with ricotta and spinach, but hidden inside was an intact egg yolk.
Chef Amaro instructed us to cut into the ravioli so the yolk would mix with the buffalo butter surrounding the pasta, creating a rich, silky sauce before adding the shaved black truffle into every bite.
The pasta was perfectly al dente, the filling creamy without being heavy, and the buttery truffle sauce was simply unforgettable.
We’ll honestly be thinking about this ravioli for a long time.
Course Four: Tripoline Cacio e Pepe
Next came a classic Roman favorite: Tripoline Cacio e Pepe
Each serving was finished tableside with an airy cloud of Pecorino Romano foam before being topped with fresh shaved black truffle.
The cheese flavor was bold without becoming overwhelming, while the foam added an unexpected lightness to such a rich pasta. Once again, every noodle was cooked to the perfect al dente texture.
Course Five: Rigatoni all’Amatriciana
One of our favorite traditional pasta dishes of the night was the Rigatoni all’Amatriciana.
Chef Amaro explained that the sauce featured authentic San Marzano tomatoes and imported Italian guanciale.
The smoky guanciale added incredible depth to the sauce, with tender pieces throughout every bite. It was comforting, rich, and everything you hope an authentic Italian pasta will be.
By this point, we had to admit we were getting full…but we still had several incredible courses ahead.
More Than Just Dinner
One thing that made the evening especially memorable wasn’t just the food, it was Chef Amaro himself!
Throughout dinner, he and his wife moved from guest to guest, sharing stories, answering questions, pouring wine, and even sitting down to chat for a while.
The evening felt less like dining at a restaurant and more like being invited into someone’s home for an unforgettable dinner party.
We also met six other guests who shared the same appreciation for exceptional food, and by the end of the evening it genuinely felt like we had made new friends.
Course Six: Bucatini alla Puttanesca
The next pasta featured homemade bucatini tossed with:
- Anchovies
- Taggiasca olives
- Chili pepper
- Fresh mussels
As olive lovers, this immediately became another favorite. The olives brought a wonderful briny richness while the anchovies melted into the sauce, creating incredible depth of flavor rather than a strong fish taste. The perfectly cooked mussels were a fantastic addition that elevated the entire dish.
Course Seven: Cavatappi with Neapolitan Ragù
The final savory course featured cavatappi pasta tossed with a slow-cooked Neapolitan ragù made from:
- Beef
- Beef short rib
- Oxtail
- San Marzano tomatoes
- Parmigiano Reggiano DOP
The meat was unbelievably tender, practically melting with every bite. It was the perfect final pasta course before dessert.
Housemade Limoncello
Before dessert, Chef Amaro served everyone a small glass of his homemade limoncello.
Bright, refreshing, sweet, and tart, it was exactly what we needed to cleanse our palates after so many incredible pasta dishes. As limoncello fans, this was another highlight of the evening.
Dessert: Affogato
Dessert was an Italian classic done beautifully.
The affogato featured:
- Madagascar vanilla gelato
- Fresh Italian espresso
- Nutella
- Hazelnuts
- Fig biscotti
The contrast between the hot espresso and cold gelato never gets old, and adding Nutella and crunchy fig biscotti made this an unforgettable ending to the meal.
Final Thoughts
Some dinners are simply meals. Others become memories. Our evening at Amaro Supper Club was absolutely the latter.
Between the incredible handmade pasta, authentic Italian ingredients, warm hospitality from Chef Orlando Amaro and his wife, and the opportunity to spend more than three hours around the table with fellow food lovers, this wasn’t just one of the best meals we’ve had, it was one of our favorite dining experiences.
