Ingredients
  

  • ½ rotisserie chicken deboned and chopped into bite-size pieces
  • ½ of 1 bottle of barbecue sauce use one you really love!
  • 2 cups shredded mozzarella cheese
  • 2 pizza crusts any kind you prefer
  • ¼ red onion thinly sliced
  • Handful of fresh cilantro chopped

Method
 

  1. Prep the Chicken: In a large bowl, mix the chopped rotisserie chicken with your desired amount of barbecue sauce. Add just enough to coat the chicken evenly, you don’t want it overly saucy.
  2. Prepare the Crust: Spread a thin layer of barbecue sauce over each pizza crust. Be careful not to use a sauce that’s too thin or runny, as that can make the crust soggy.
  3. Add Cheese: Sprinkle mozzarella evenly over the crust.
  4. Top It Off: Add the barbecue chicken and sliced red onion.
  5. Bake: Bake according to your pizza crust’s instructions. We love using cauliflower crust for a gluten-free option, but any crust works beautifully here.
  6. Finish with Fresh Cilantro: Once the pizza comes out of the oven and cools slightly, sprinkle chopped cilantro over the top.
