Greek Chicken Bowls (Easy Rotisserie Chicken Meal)

  • ¾ cup chopped rotisserie chicken
  • 2 cups field greens or lettuce of choice
  • ¼ cup Kalamata olives
  • ¼ cup chopped tomatoes
  • ¼ cup chopped cucumbers
  • ¼ cup feta cheese
  • ¼ cup hummus
  • ¼ cup tzatziki sauce

Easy Greek Dressing

  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • ½ teaspoon dried oregano
  • Salt and pepper to taste

Method
 

  1. For Dressing: Add all dressing ingredients to a small mason jar and shake until well combined.
  2. Start with a base of field greens or your favorite lettuce.
  3. Add the chopped rotisserie chicken.
  4. Top with olives, tomatoes, cucumbers, and feta cheese.
  5. Add a scoop of hummus and tzatziki.
  6. Drizzle with the Greek dressing.
  7. Toss lightly or leave layered! Either way works beautifully.

Notes

Tips & Variations

  • Swap greens for rice or quinoa to make it more filling
  • Add red onion or banana peppers for extra flavor
  • Use grilled chicken instead of rotisserie if preferred
  • Make multiple bowls at once for easy meal prep
