Method
- Heat 2 tablespoons of oil in a medium skillet over medium heat.
- Add frozen vegetables and sauté until tender.
- Add chopped rotisserie chicken and cook until warmed through.
- Pour in the Thai red curry sauce and stir until everything is well combined and heated.
- Remove from heat.
- Prepare cauliflower rice according to package directions.
- Spoon the curry mixture over the cauliflower rice and serve warm.
