Easy Thai Chicken Curry with Rotisserie Chicken

This easy Thai chicken curry with rotisserie chicken is a quick, budget-friendly dinner made with Trader Joe’s red curry sauce and simple freezer staples. Ready in minutes!

Ingredients
  

  • 2 cups chopped rotisserie chicken
  • 2 cups frozen vegetables
  • 1 bottle Thai red curry sauce we love Trader Joe’s!
  • 1 cup cauliflower rice
  • 2 tbsp oil

Method
 

  1. Heat 2 tablespoons of oil in a medium skillet over medium heat.
  2. Add frozen vegetables and sauté until tender.
  3. Add chopped rotisserie chicken and cook until warmed through.
  4. Pour in the Thai red curry sauce and stir until everything is well combined and heated.
  5. Remove from heat.
  6. Prepare cauliflower rice according to package directions.
  7. Spoon the curry mixture over the cauliflower rice and serve warm.
