Cajun Chicken & Sausage Pasta

Ingredients
  

  • 1 rotisserie chicken deboned and chopped
  • 1 pound andouille or smoked sausage sliced
  • 1 pound pasta of your choice
  • 1 can cream of chicken soup
  • Cajun seasoning to taste
  • 1 cup shredded cheddar cheese
  • Olive oil
  • Reserved pasta water
  • Optional: hot sauce and additional shredded cheese for serving

Method
 

  1. Cook the pasta according to the package directions. Before draining, reserve about a cup of the pasta water.
  2. In a large skillet, add a small drizzle of olive oil and cook the sliced sausage over medium heat until browned.
  3. Add the chopped rotisserie chicken to the skillet and cook until warmed through.
  4. Sprinkle in Cajun seasoning to taste, stirring well so the chicken and sausage are coated.
  5. Add the cream of chicken soup and shredded cheddar cheese, stirring until melted and combined.
  6. Slowly add reserved pasta water, a little at a time, until the sauce reaches a creamy consistency similar to fettuccine Alfredo.
  7. Taste and add more Cajun seasoning if needed, but be careful — the sausage and seasoning can already bring plenty of salt.
  8. Add the cooked pasta to the skillet and toss until everything is well coated in the sauce.
  9. Serve warm with extra shredded cheese on top and hot sauce if desired.
