Buffalo Chicken Dip

Some recipes just feel like they belong to certain seasons... buffalo chicken dip is usually one of them. But after making this version with a rotisserie chicken (aka our weeknight MVP), we’re convinced this is an “anytime you want it” kind of dish.

Ingredients
  

  • 8 oz block of cream cheese softened
  • 3 cups rotisserie chicken deboned and chopped
  • 1 8.5 oz bottle buffalo sauce
  • 3/4 cup ranch dressing
  • 1 1/2 cups shredded cheddar cheese

Method
 

  1. Preheat your oven to 350°F.
  2. Spread the softened cream cheese evenly into the bottom of a 9×13 baking dish.
  3. Add the chopped rotisserie chicken on top.
  4. Pour the buffalo sauce evenly over the chicken.
  5. Drizzle the ranch dressing on top of the mixture and lightly spread it across.
  6. Sprinkle the cheddar cheese evenly over everything.
  7. Bake for 30 minutes, or until hot, melty, and bubbly.
  8. Serve warm with tortilla chips (or celery sticks, crackers, or whatever you love).

Notes

 

  • You don’t have to mix the ingredients before baking (unless you want to)
  • Adjust the type or amount buffalo sauce depending on how spicy you like it.
  • Ranch can be swapped for blue cheese dressing if that’s more your vibe.
  • Rotisserie chicken makes this incredibly fast, but leftover chicken works too!
