This is our recipe for Easy 5 Ingredient Spicy Beef Vegetable Soup! It is only 5 ingredients, and the best thing is that you can tailor the recipe to fit whatever ingredients you have in your pantry, fridge, or freezer. Don’t have ground beef? Use ground turkey, pork, chicken, or whatever you have! Even rotisserie chicken would work. You can make this recipe vegetarian by substituting the beef for your favorite can of bean and using veggie broth instead of chicken broth.
Also, I like to go light on the ground beef and fill the soup up with veggies! I like to make a whole pound of organic ground beef, and then only use half in the soup and stick the other half in the fridge or freezer to use in another recipe! I’m trying to stretch expensive meats to last as long as possible during this quarantine time. Have any other tips to stretch your food? Comment below!

The Ingredients:
1 Carton of Organic Chicken Broth
1 Can of Pasta Sauce (any kind!)
1 Can of Rotel (my favorite is spicy, but I use mild in the video)
1 Frozen Vegetable Soup Mix, or two cans of mixed vegetables, or just any kind of leftover vegetable you have in your fridge!
½ Pound of Cooked Ground Beef (or your favorite type of protein)
The Directions:
These directions are really hard…. Just dump everything into a slow cooker, give it a stir, and leave it on until you are ready to eat!
Either leave it in the slow cooker for 4 to 6 hours on high heat or 6 to 8 hours on low heat. These ingredients will generously feed 4 people.
The best part about this soup is it is a great way to use up leftovers. These five ingredients can really be the base ingredients. Also, if you live with picky eaters who don’t like leftovers unless you disguise them, this is the PERFECT dish for that!
