Easy Tuscan Chicken
This Easy Tuscan Chicken recipe is so quick to make. It makes a great weeknight dinner because it comes together so quickly and uses ingredients you probably already have on hand. You can use fresh spinach if you don’t have frozen or sun dried tomatoes or canned if you don’t have fresh tomatoes. The different colors of the red tomatoes and green spinach really makes a beautiful dish. Some versions use chicken thighs or chicken breast. And you could use either, but they would take a little longer to cook. We love using chicken tenders because they cook so quickly.
Here are the Ingredients:
2 tbsp olive oil
2 pounds chicken tenders
Salt and pepper
1 tbsp Italian seasoning
3 tbsp butter
3 cloves garlic, minced
10 oz bag frozen spinach, thawed and squeezed dry
4 ripe roma tomatoes, chopped
½ cup heavy cream
½ cup milk
½ cup grated parmesan cheese
1 pound spaghetti, cooked al dente
The Directions:

Heat olive oil in a large skillet. Salt and pepper chicken tenders, then sprinkle with Italian seasoning. Add to the pan and cook over medium high heat in a skillet until no longer pink. (If you have a meat thermometer, the FDA recommends an internal temperature of 165ºF for poultry).

Once cooked, remove the chicken from the pan to cool and set aside.

In the same plan, add butter until melted. then garlic and saute about 1 minute. Careful not to burn it! After the garlic has sauteed, add frozen or fresh spinach and tomatoes and saute until tomatoes have softened.

Add heavy cream and parmesan cheese.

Bring to a simmer and return the chicken to the pan.

Simmer for another minute and then add milk if the sauce is too thick

Serve over pasta with additional parmesan cheese. Any noodle will do, but we chose spaghetti noodles! Enjoy!
