One Pot Sausage Potato Kale Soup

If you were searching for a sweater weather soup, you came to the right place! This One Pot Sausage Potato Kale Soup is soup-er simple and absolutely delicious! It also makes plenty to serve a large family and tastes great as leftovers. 

One Pot Sausage Potato Kale Soup

Serves 8

The Ingredients: 

3 Large Russet Baking Potatoes Potatoes 

1 Head Of Kale 

2 Quarts of Chicken Broth 

3 Cloves of Garlic (minced)

3 Ounces of diced pancetta 

1 medium yellow onion 

1 pound ground sausage 

½ cup of cream

Salt and pepper to taste 

The Directions: 

  1. Brown sausage and drain grease if desired. Add pancetta and onion until onion is translucent.
  2. Add garlic and cook for another minute. Pour in chicken broth and bring to boil. 
  3. Chop potatoes into half inch cubes and add to chicken broth. Boil until potatoes are tender. 
  4. Add kale and cook until gently wilted. Turn off heat and stir in heavy cream. 
  5. Salt and pepper to taste! Serve with crusty sourdough bread for dipping!
