Grilled Cheese + Tomato Soup

Grilled Cheese…. C’mon guys it is a CLASSIC! Think back to when you were a kid. Personally, this was one of my go to meals. Kind of a quick, thrown together, mom and dad have somewhere to be and I’m stuck watching my younger brother and have to make us dinner. I’d go with two slices of bread, American cheese, and Campbell’s canned tomato soup. Let me assure you THIS IS NOT THAT! This is the very grown up version of the childhood classic. And it’s super homemade, so you can impress anyone with it. And it is also convenient for lent (if you’re not eating meat on Fridays).

For the bread, we use none other than Mollie’s Bread Shop Bread. It is delicious, soft, succulent, and smells just divine. I could be biased because the owner of this glorious bread is in fact my maid of honor, but you’ll just have to try it for yourself. Quick! Go get her bread here: https://www.molliesbreadshop.com

Also, we aren’t doing any of that canned soup stuff. We are making it homemade!! Don’t be afraid it’s really easy and you can do it. It’s only 9 ingredients and then you mix it up with a hand blender or you can even stick it in a regular blender such as a Vitamix if you don’t have a hand mixture. Just be careful because hot soup can expand in a blender and you definitely do not want scalding hot soup flying everywhere in your kitchen.

Here are the ingredients:

Grilled Cheese 

8 slices thick sliced sourdough bread

2 cups of shredded cheddar cheese

4 tbsp butter, softened

4 tbsp mayonnaise

1 tbsp dijon mustard

½ tsp garlic powder

 

Mix together mayonnaise, mustard and garlic powder.  Spread on one side of each slice of bread. Top one side of the bread with ½ cup shredded cheddar. Butter both sides of the bread and sear over medium heat in an iron skillet until bread is toasted. Flip over and sear on the other side until cheese is melted.

Tomato Soup

1 yellow onion, diced

2 tbsp butter

1 28 oz can fire roasted crushed tomato

3 cups chicken broth

2 tbsp sugar

1 tsp dried basil

½ tsp cayenne pepper

Salt and pepper to taste

¼ cup heavy cream

Melt butter in a large stockpot and saute onion until translucent and lightly caramelized. Add tomato, chicken broth, sugar, basil, cayenne pepper, salt and pepper.  Simmer over medium low heat for about 20 minutes. Remove from heat, stir in heavy cream and serve.
